Need help identifying a song in "Breaking Away"

I need help identifying the piece of music played in the movie just after Dave comes home from winning the trophy at the beginning of the movie. He gives his father the trophy and goes to take a shower. Before he does, he puts on a record with the name "Enrico Gimondi" on it. I've been searching around for that name and I have found music from Enrico Caruso (I think Dave bases his serenade later in the movie off him). But the music playing after Dave puts on the record is not Enrico Caruso (I think)--I recognize it as a famous piece of music but don't know what it is. Can anyone help me identify it? Also, any recommendations for the best way to compile the music from the movie in terms of CDs to buy?

-Second, but unrelated, question: Why is the soundtrack to "Big Night" so expensive to buy a new copy of? Were only a small number ever produced?

The title of the song, I believe, is "Ah, So Pure". It's from a German operetta titled "Martha". Not sure how Dave manages to attach Italian lyrics to the tune.
