One of the best programs is "EWQL Symphonic Choirs" which allows you to even make the choir sing the text you want. In order to make it work you really need a good computer (quad core and 8gb memory), and be sure to use the PLAY edition, cos the previous one its imposible to upload at once, without causing the computer to collapse.

Its quite expensive, but since you wanna make soundtracks, with orchestra and stuff I presume, the developers offer the "composer collection" for around $1000-1200 (you can change 2 or 3 stuff, cos not all is usefull, in the end will cost $1200 more or less)
