There are many proficient composers in this genre. One of the finest in my opinion (and personal favourite in this category) is definitely KAORU WADA. Other composers I highly recommend are NOZOMI AOKI, YOKO KANNO and SHIRO SAGISU. Not to mention the legendary KENJI KAWAI, but the guy has long been scoring also lots of movies.

One of the best composers in this genre is JOE HISAISHI for his works for Studio Ghibli anime movies. Some of them mentioned above, Mononoke Princess, Spirited Away, My friend Totoro, Howl's Castle and many more. He also composed many Kitano films and other japanese films.

The Giant Robo series by Masamichi Amano is epic. In fact I would try anything by Masamichi Amano. The music is similar to early Star Wars in spirit. There are seven soundtracks. Vol One and Two have been released in the US. Vol Three can be found online which is the Japanese pressing. The others are very hard to find.
The original score for Galaxy Express 999 (Galaxy Express Eternal Edition File No. 1 & 2.) is also a great soundtrack. Product number COCX-31392-2/Columbia Records (Japan 2001) Be careful there a lot of GE 999 soundtracks and many are vocals.
I enjoy Gunbusters OST but not sure its for everyone.
